Clearwater Cove South Island Pinot Noir 2015

This Pinot Noir is brimming with flavours of ripe berry fruit and savoury notes, which integrate well creating a beautifully balanced wine.
Enjoy on its own, or match with duck, lamb, venison and veal dishes.
The low yielding vines were harvested at optimal ripeness, with each clone being made separately. The parcels were cold macerated at 6 – 8 degrees for around 5 days before being warmed and inoculated with selected yeasts. A fast, hot fermentation proceeded with regular hand plunging which has helped to craft a wine with elegance and balance. The parcels were gently pressed off after fermentation, and aged with French oak while undergoing malolactic fermentation. The parcels then underwent a light fining, prior to blending, filtering and bottling.
Overall, the South Island had a sensational growing season over the 2015 vintage. It was one beautifully clear day after the other, warm and sunny with little rainfall. However, we still experienced cool nights during the ripening period which helped to develop intense fruit flavours in the grapes. These conditions ensured healthy, clean vine canopies and fruit packed with flavour and intensity across all varieties.
