"A beautifully maturing chardonnay, the fragrant bouquet shows mandarin, pineapple, toasted almond and a hint of vanilla characters. It is ripe, rounded and smooth on the palate with attractive fruit intensity and rounded mouthfeel, nicely framed by juicy acidity. Flavoursome and very easy to enjoy. At its best: now to 2018." Aromas of citrus, white peach, nectarine and nuances of cinnamon.
The palate is finely balanced, with a creamy texture courtesy of the time on lees all supported by a linear backbone of acidity which combines to create an excellent length of flavour. This wine is a perfect example of cool climate Chardonnay with subtle oak usage playing nothing more than a supporting role.
The fruit was chilled and whole bunch pressed, with 95% of the wine fermented in a combination of new, one, two and three year old French oak hogsheads (55% New oak). 5% was fermented in temperature controlled stainless steel tanks to maintain freshness. 15% of this wine also completed malolactic fermentation to soften the palate and add extra complexity. The oak matured component was aged for 6 months, with regular lees stirring to enhance the structure of the wine prior to bottling.
Grant selects his fruit from prime cool climate vineyards in Eden Valley and Adelaide Hills, including his Summers vineyard in Eden Valley.
