"A striking bouquet with a savoury white fleshed fruits of Asian pears and yellow apples, there’s a fine lees and sandy soil quality layering in some depth and complexity. Dry on the palate with a distinctive savoury and white pepper quality, flavours of apples and white fleshed orchard fruits, some mineral and saline qualities. "Bright, even, pale straw yellow with depth. The nose is soft and coy, with quince, pear, spice, honey and subtle floral. Medium-bodied, dry to taste, aromas of quince, ripe pear entwined with ginger, nutmeg, white floral and a hint of honey. The palate is rich, with complexity, along with an oily mouthfeel. This Mystery wine is shy at first, almost playing hard to get, but with a little time it opens up and rewards you with a beautifully powerful aroma and invites you for a taste. This wine is full bodied, aromatic and fruitful with a creamy texture. The flavour lingers well after the first taste and the fine acidity helps cleanse the palate.

This single-vineyard Mystery Pinot Gris has a delicate richness and power driven by the low cropping and fully ripened grapes hanging from the vines that have been nourished by the local waters.

The grapes were quickly pressed off the skins and fermented under very cool conditions. The ferment was stopped when the fruit sweetness complimented the fine acidity. The wine was left on full yeast lees for an extended period to mature and gain extra complexity.
