A bright, brambly, seductive cherry red hue with aromas of wild berries, cherries, sous bois and a line of green spice with lifted clairvoyant notes. The flow through to the palate is sublime with a continuation of these precise red fruits with some ‘green-olive’ notes, wound up with a sinewy tautness. This provides a chewy supple elegant warmth to the palate with an elegant deportment providing a long and intelligent finish.

The Settlement Vineyard is a close planted, hillside block delivering wonderful brights and spice. The fruit was handpicked and fermented in small open top vessel. 20% of the fermentation was by whole bunch to enhance the aromatics and to retain the vitality of the resulting wine. Very little pigéage was done, perhaps 1-2 times per day to keep the cap wet. Approximately 21 days on skins before being basket pressed to French Oak Barriques. 15% of these Oak Barrels were new. The young wine spent 9 months in oak through winter, relaxing and undergoing spontaneous malolactic fermentation before being blended in October.

Food Pairing: This wine has the class and capacity to handle village dishes – cassoulet to more sophisticated game meats.
