"No added sulphites, wild yeast fermentation, made from old vines and bottled unfiltered and unfined. You’ll need to know how to operate a corkscrew as the range is bottled under DIAM cork (and a wax seal). Medium garnet with a brightish purple rim. Dusty, dusky leaf matter with earthy dark cherry,anise and cinnamon spice with a meaty hint. Mid weight. Brightly coloured cherry fruit with easy, drying fruit tannins (no oak in the fermentation to give woody influence). Tense and pent up with nervy acidity. "Sappy, slurpy, fresh feeling lighter red wine with bright but dark cherry juice and cranberry tang to the fore. Super easy to drink, nice, crisp feel with some silty tannins lending some pucker. Fragrant, fresh and lifted and full of poised Pinot Noir Character. This is smooth, silky and seductive on the nose and palate- exhibiting distinctive cherry and savoury notes followed by gentle acidity on the finish.

In terms of the 2021 vintage, spring 2020 was warm and wet, with enough bursts of sunshine to ensure the best flowering and fruit set in 3 years. Consistent fruit set matched with plentiful ground water led to vigorous canopy development and large crops. The possibility of disease hung heavy especially after large amounts of rainfall in January and the quality of the vintage was in the balance. However, an auspicious change in conditions led to a two-month run of glorious weather that saw warmdays, cold nights and elongated ripening. In terms of quality, tannin concentration and ripeness will be thehallmark of 2021. Wines retained good natural acidity and great ripeness of flavour was achieved.

A less is more regime in the vineyard and the winery has resulted in a fresher more uncompromising wine stylistically. Handpicked and sorted and then added to open fermenters before undergoing plunging. Consigned to stainless steel after fermentation this wine was bottled shortly after with little additions and was neither fined nor filtered.

Wild Folk shines a light on wines made without artifice and intervention. Fruit nurtured in the vineyard, handled gently in the winery without additions that taste as nature intended. No fining or filtration and no sulphur means these are natural expressions of the varieties and the regions were grown in.
