Medium in colour with that atypical Pinot Noir nose of strawberries, dark plums and cherries with a savoury edge. The palate is rich and sumptuous with smooth cherry and vibrant red berried fruit. It presents a beautifully lush mouthfeel complemented by fine tannins and soft acidity that provide structure and length.
A cool, wet spring helped with soil moisture followed by a warm November ensuring no damaging weather conditions. Cool and calm weather followed that meant even ripening and good acid retention. A mild end to summer and a cool autumn saw fruit hanging with no disease or extreme heat posing a problem. Yields and quality were up across the board.
Sourced from establishes vineyadrs in the Limestone Coast known for its distinguished Pinot Noir fruit. Fermented in three tonne open top fermenters with whole bunch influence and hand plunged twice daily. Partially matured in seasoned small format French oak before bottling.
Take it to the Grave is a joint venture between Nicholas Crampton and South Australian winemaker Corey Ryan created to deliver interesting and rewarding wines whilst challenging a few established rules and preconceptions. The Take it to the Grave Shiraz takes on the mysteries and individual personalities of old-vine vineyards.
