The 2021 Coriole Songbird Cabernet is highly aromatic, with aromas of mulberry, with blackcurrant, bay leaf and cherry ripe. The palate has lovely generosity and crunchy textural tannins. The palate shows flavours of cassis, red berries, bitter chocolate and vanilla. This is a bright, playful and modern cabernet which will remain fresh in the bottle for some time.

2021 will be sure to be remembered as one of the great vintages in McLaren Vale. The vintage started off well with slightly above average rainfall through the winter and spring of 2020. Once the growing season commenced, we had healthy vines, and mild conditions through spring and summer. Vintage kicked off in mid-February and a well-spaced vintage saw the last fruit picked in mid-April. We had average yields across most white varieties with the resulting wines showing great clarity of aromatics. In shiraz, fantastic fruit condition and even ripening made life easy in the winery where we could watch each block express its identity - bright fruit and juicy flavours, with ripe, full tannin structures and impressive length of flavour. Sangiovese, nero, montepulciano and negroamaro very strong with vibrant primary fruit and lifted aromatics.

The name "Songbird" suits this regal yet pretty wine. A great example of what McLaren Vale can do with the often under rated Cabernet Sauvignon. Open fermented in 3-4T batches, gentle hand plunging gives subtle extraction of the classic Cabernet tannins and structure. An approachable wine that will still reward the connoisseur. Songbird Cabernet Sauvignon is produced from Estate Grown fruit and combines freshness and aromatic lift with classic Cabernet structure. Songbird refers to the huge range of birds that we have in the Coriole gardens, vineyards and native scrublands.

Food Pairing: Persian cuisine will make this Songbird sing. Accompany your favourite BBQ meat with a roast beetroot salad with date, walnut, Woodside goat chèvre and pomegranate molasses.
