Description

  • French oak
  • Dark chocolate
  • Blackcurrant
  • Soft, full tannins

Elegant and powerful, with an intense deep inky colour and vibrant purple hues. Dark chocolate and mint aromas and a hint of sandalwood follow through to blackcurrant and bell pepper on the palate. Soft full tannins are complemented by a lengthy finish and subtle French oak.

Sourced from three vineyards across McLaren Vale. Our primary cabernet sauvignon vineyard sits on the exposed slate encrusted Sellicks Hill, overlooking the Gulf St Vincent. Fruit from this vineyard provides depth and structure. Our second vineyard in Willunga, is slightly cooler, planted on loam over limestone, producing grapes with richness and finesse. The third vineyard is planted on deep sandy soils in Blewitt Springs, growing fruit that is aromatic and elegant.

McLaren Vale fared well in a challenging vintage, due to the moderating influence of the Gulf St Vincent, reliable spring rainfall and and excellent water management; enabling the vines to grow unimpeded during hot spells. Yield was slightly impacted by a hailstorm during flowering in November, and a day in January where temperatures soared to 46.6°C, burning some leaves and fruit. Harvest was fast and furious and while quality was exceptional, yields were down by up to 25%.

Gently destemmed, leaving mainly whole berries. Cold soaked to release soft tannins and colour prior to inoculation with a specially selected yeast strain that steadily warmed the ferment to 25°C, where it was held until dry. Pumped over daily Maturation for 12 months in second and third use French oak. Each parcel was processed separately to allow maximum flexibility and expression of the best flavours and characters from each site during final blending.
