Sam Kim, Wine Orbit, Dec 2018

Description

"The wine combines attractive fruit intensity with elegant savoury notes, showing lifted aromas of dark cherry, spiced plum, game, dried herb and toasted almond on the nose, followed by a beautifully rounded palate that is supple and silky. It is attractively expressed with sweet berry flavours and spicy/savoury nuances" Sam Kim, Wine Orbit, Dec 2018

This wine displays a bright dark, rich cherry red in the glass with garnet hues. There are aromas of cherry and spice, supported by subtle nuances of toast oak and complex aromas of fungle/forest floor. On the palate, the wine delivers elegant Pinot flavours in a mid-weight, attractive style that showcases varietal flavours. These vibrant, varietal flavours are complemented by firm tannins and well balanced use of oak that does not dominate the wine. The palate is full but soft with great length of flavour and finishes dry with perfect weight and mouthfeel to create a wine of wide appeal.

The 2018 Vintage in the Waipara Valley was typified by warm daytime temperatures, tempered by cool nights. An ideal summer ensured great vine health and fruit condition. Harvesting of fruit was carried out early in April.

The fruit was destemmed without crushing to retain a percentage of whole berries in the ferment. Fermentation was carried out in small fermenters with regular daily hand plunging of the cap to extract colour and tannins. Further maceration post-ferment and prior to pressing has enhanced the palate with soft but firm tannins. After malolactic fermentation the wine underwent a period of oak maturation prior to stabilising for bottling. The wine has not been fined in order to retain maximum flavour and mouthfeel.

Food Pairing: The perfect drink for a picnic with cheese, cold meats, patés and terrines.
