Description

Dark colour with purple tints in the glass. This decadent bouquet showcases scents of red and black berries together with hints of spiced oak and vanilla. It is complex, rich and long on the palate, with intense flavours of raspberry and wild strawberry. The tannins are soft and silky; the finishing, complex and satisfying.

The vines are grown in clay and limestone soils, from height of the Aude Valley terraces, in the beautiful foothills of the Pyrenees. The cooler climate, mild temperatures and low rainfalls make for an ideal climate for this delicious Pinot Noir. The 10 year-old vines are pruned using the "cordon de royat" (trellised) and "guyot" (trellised) methods. Relatively low yields (50 hl/ha).

Cold pre-fermentation maceration (about a week) takes place, followed by one weeks' fermentation at controlled temperatures. 25% of the final blend is then aged in french oak barriques for 6-9 months.
