Description

"Bright, straw-yellow colour with lemon-green hues, a little lighter on the edge. The nose is up-front, full and solidly packed with aromas of ripe yellow stonefruits along with savoury citrus and tropical fruits, showing some secondary development, unfolding creamy barrel-fement and nutty oak notes. Medium-full bodied, the palate is full, open and accessible with good depth of sweetly ripe yellow stonefruits and tropical fruits entwined with a little savoury citrus fruit from secondary development. The mouthfeel is rounded and concentrated, and the palate enlivened by fresh, lacy acidity. The wine carries easily to a light, phenolic-textured, dry finish. This is an up-front, rich and rounded Chardonnay with sweet stonefruit and tropical fruit flavours, just showing some secondary interest, finishing dry. Serve with poultry and pork over the next 3-4 years. Clone 95 and 15 fruit fermented, 60% in tank and 40% in barrique to 13.5% alc., the wine aged 10-11 months on lees, with approx. 5% of the wine aged in barrel, and 40% of the wine undergoing MLF" Raymond Chan, Jul 2017

It is delectable and sumptuous on the palate, and displays excellent fruit weight and silky texture, wonderfully complemented by stylish oak influence and well-pitched acidity. This Mystery Chardonnay is lightly oaked, and this gentle influence of oak accentuates the sweet melon and peach flavours on the palate. Showing ripe tropical fruits of lychee, rambutan, and cantaloupe, citrus blossum and peach on the nose. The boquet also contains notes of nougat and vanilla. The texture is creamy and luscious with a full rich tropical fruit finish.

The Chardonnay grapes for this Mystery wine were planted on the most western part of the vineyard with a mixture of machine and hand harvesting being employed. Fruit exposure is limited to achieve excellent flavour and phenolics balance. After a slow pressing cycle the juice was settled and then fermented in both stainless steel tanks and French oak barriques (40%). Yeast strains were specifically selected to create complexity and depth in this Mystery wine. Drinking well now but will also continue to reward with careful cellaring up to 2020.

Food Pairing: This Chardonnay will be a great accompaniment to seafood and poultry dishes, and with time it will grow to a well rounded wine to be drunk with white meat and game fowl dishes.
