Amaretto is a sweet, almond-flavoured, Italian liqueur.The name amaretto originated as a diminutive of the Italian word amaro, meaning "bitter", which references the distinctive flavour lent by the mandorla amara (the bitter almond) or by the drupe kernel. It is soft on the palate with a sweet almost marzipan like flavour.

Distillerie Francoli, in Ghemme (north Italy), was founded by Luigi Francollie and is still family owned. It is famous for his grappas however they also produce a fine range of liqueurs under the Santa Marta label. This amaretto is a classic Italian liqueur made from macerated roasted cocoa beans, vanilla pods, apricot kernels, bitter almonds, sweet orange zest and orange blossom in water and alcohol. After a short fermentation this infusion is distilled and mixed with a sugar syrup and more alcohol.

Amaretto can be drunk by itself, used as an ingredient to create several popular mixed drinks, or added to coffee. It is also commonly used in a number of culinary applications.
