"Elegant and delightfully expressed, the bouquet shows grapefruit, orange peel, lime sorbet and floral characters, leading to a finely textured palate that is focused and linear. The wine offers bright fruit intensity and vibrant mouthfeel, beautifully supported by whispering sweetness and racy acidity, finishing long and mouth-watering. Style: Off-dry. The fruit was hand picked from a vineyard site in the Dry River area south of Martinborough. After destemming, the juice was held cold on skins for six hours to extract flavour components before pressing off. After 48 hours of cold settling, the juice was racked to a stainless steel tank where it was inoculated with a cultured yeast. Fermentation took place over a period of three weeks at an average temperature of 15ºC, and the wine was chilled to 0ºC to maintain a small amount of residual sugar for balance. The wine was then aged in tank on its yeast lees for 8 months before protein stabilisation and filtration. The wine was bottled in February 2019.
