"This is wonderfully styled and complex on the nose showing dark berry, vanilla, thyme, cedar and subtle game characters, followed by a concentrated palate that's fleshy and persistent. Two selected vineyard sites on the Martinborough terrace and Dry River Flats were hand picked in late March 2019. A rigorous bunch selection process followed, and 40% of whole bunches were retained in the fermenter with the rest destemmed on top. The wine started a spontaneous fermentation, and gentle pumping over occurred twice daily during full ferment, with daily pigeage once the ferment had slowed. Fermentation temperature reached 30ºC. The wine stayed on skins for 35 days to build structure, then was pressed to stainless steel for 48hrs settling before racking to French oak barriques for maturation for 11 months. Malolactic fermentation took place in the barrels in spring, then the wine was blended into a stainless steel tank under inert gas for settling. Filtration and bottling followed in early March 2020.
