Brillant yellow-greenish colour, with white flowers and citrus aromas. Well-balanced in mouth, with a nice acidity and minerality, good ending. A straightforward wine.
Mechanical harvesting, From the 11th to the 17th of September 2018. Alcoholic and malolactic fermentations ; vinification and ageing in thermoregulated stainless steel vats.
In 1986 Claude Chevallier, who has a passion for the wines of Chablis, revived the family tradition of wine making and established Domaine Chevallier. Wine making and cellar door are located in the small village of Montallery - tucked into the hills between Courgis and Beines. The Estate covers just 13 hectares across 3 appellations. 4 hectares in Petit Chablis, 9 hectares in Chablis and 0.3 hectares in Chablis 1° Cru. Today this small producer of hand crafted wines is very much a family run affair with daughter Celine Courty-Chevallier and her brother Tommy Chevallier running the business leaving Claude to oversee vineyards and winemaking.
