This Mystery Riesling boasts fragrant aromas green apple and pineapple on the nose with a touch of mandarin and flint. Ripe citrus flavours on the palate of mandarin, peaches and spiced ginger with honey and tropical fruits. An off-dry style wine which has good concentration couple with zingy acidity. This is balanced against fruit sweetness with juicy mineral length, crunchy phenolics and a long finish.
The fruit for this Mystery wine was hand harvested on 4 April 2016 at 20.3 brix. The fruit was inoculted with a selected wine yeast to undergo fermentation. The fermentation was stopped retaining around 17.35 g/L residul sugar.
Food Pairing: The fragrant apricot and citrus flavours of this wine lend it to pair beautifully with many Thai style dishes, especially seafood. The balance of acid and sweetness can contracst nicely with spicy flavours, or cut through rich flavours such as salmon. Though not a dessert wine, it can also pair well with a selection of cheeses either post your meal or as an aperitif.
