Today, Selaks encompasses a comprehensive range of wines and has earned numerous accolades along the way. Pinot Noir is the flagship varietal in the up-andcoming wine region of Central Otago. Receiving temperature extremes throughout the year, the wine produced is exceptionally rich and complex.
After a warm and early start to the 2015 season, an unusually cold November saw snow fall on the mountains - halting maturation of fruit on the vines. Short lived, the temperatures soon picked up in December and January to produce grapes of superb ripeness and bright aromatics.
The grapes were destemmed without crushing, our grapes were soaked with their skins for an average of 16 days before being transferred to tanks. Fermentation peaked at a maximum of 32 degrees Celsius to extract maximum colour and flavour from the fruit. Maturation took place in oak barrels for a total of 12 months before bottling.
