In the words of Sarah Jane Evans MW in Decanter Magazine “Norrel Robertson, Master of Wine has spent years seeking out the best expression of high-altitude old vineyards and making wines of great character.” Here he selects vines with an average age of over 35 years that are grown on chalk and clay soils at an altitude of 600-900m. The combination of free draining soils, minimal rainfall and unique microclimate all add to the excellent colour and distinctive aromas and flavours. The grapes are hand harvested, crushed and destemmed. Temperature controlled fermentation takes place at 28°C for 7 days followed by a short maceration. 15% of the wine is matured in American and French oak for 4 months before bottling.
