Description

Ripe plum and mulberry fruit aromas with notes of earth and cedar. A core of fleshy plum fruit flavours with silky fine grained tannins contributing lovely palate texture and structure.

An exceptional 2014 vintage. It started with a wet winter and early spring with rain falling at the right time. This was followed by dry but not hot conditions-utopia for wine grape growing. It was a gentle summer with remarkable unchanging conditions day after day, up until the final days of harvest. These mild conditions maximised flavour development and ensured fine, ripe tannins in the red varieties. The slow even rate of ripening meant that harvest decisions were very precise with the result being exceptionally balanced juices and wines.

The fruit from each block was tasted twice weekly to ensure it was picked at its optimum. The Merlot was harvested in the middle of the night to ensure it reached the winery as cool as possible. The cold fruit is then destemmed and cold soaked to allow for early extraction and bright aromatics in the end wine. The Cabernet batches were picked between dawn and midday to ensure fruit temperature was 15-20C, ideal yeast conditions to ensure immediate fermentation. Each parcel was fermented at 22-26C for 6-8 days with each ferment being thoroughly aerated every 8 hours. Following fermentation, each parcel was pressed separately to tank before racked off lees. 15% of the blend was matured using French oak for 10 months with the remainder kept unwoodedand fruit driven. The final blend was filtered only once prior to bottling.
