"Full, near-impenetrable black-red colour with a lighter edge and slight purple hues. The nose is fine and firmly concentrated with intensely packed aromas of ripe blackberries, black pepper, ink and spices with subtle earthy and fragrant ok notes. Medium-full bodied, the palate is well-concentrated with ripe flavours of blackberries, black pepper, plum and spice notes with liquorice, earth and ok detail. The fruit is supported by fine, grainy tannin structure, balancing the richness. The wine is carried by the texture and grip to a long, lingering finish of sweet black fruits, pepper and earth. Brilliant garnet with a purple hue in the glass with aromas of mocha and mulberry, which are complemented with vanilla and cedar oak. This premium McLaren Vale Shiraz include displays distinctive regional characters with generous bright red fruits across the palate including blackberry, blueberry, violets intertwined with spicy fine grained tannins. The French and American oak integrates harmoniously with these dark berry characters, providing a full flavoured wine with layers of texture and flavour. This is overall a generous Shiraz that we believe over delivers on mouthfeel flavour and length.

Mclaren Vale has a diverse mix of soil types and vineyard orientation that enhance the complexity of Serafino Wines. Serafino's black label is a showcase of this wineries finest wines showcaseing these fabulous, distinctive varietal and regional characters. The Shiraz grapes were sourced from Serafino's family owned estate from vineyard's situated on Binney and Malpas roads in McLaren Vale.

The grapes were picked at optimum flavour and intensity and delivered to the Serafino winery to be crushed and destemmed. Fermentation was completed in our four tonne open fermenters. The fermentation process took around seven days, during which each fermenter was carefully pumped over two times a day and the juice was racked off the skins and then returned again to help with colour extraction, tannin enhancement and building the depth of flavour. At the end of primary fermentation the wine was pressed off skins and allowed to complete malolactic fermentation. The wine was aged in a combination of 25% new and older French and American oak hogsheads (300L), for a further 12 months.
