Sauvignon Blanc grapes grown in flint, clay soils in the Loire Valley.
30% of the grapes remain in contact with their skins during maceration, which takes place for 12 hours before grapes at Pneumatically pressed. The wine then undergoes fermentation at 16°C, followed by 3 months of ageing on lees.
