Description
Barrel fermented offers complexity on the nose with orange-floral and mineral elements. The palate is all about texture - tightly packed yet smooth and mouth-filling - seamless. Green fruits and lime run through to the long finish.
This Sauvignon Blanc is produced from a selection of grapes from our Marlborough vineyard located in the Waihopai Valley. Grapes were machine harvested during April before processing in Babich's winery including extended lees contact and fermentation with wild & inoculated yeasts in new & old Oak. 40% was malolactic fermented, spending 5 months in barrel. A combination of both barrel and cool tank fermentation has added complexity and interest to this intensely flavourful wine. Recommended cellaring for this vintage is 1-7 years from release.
Food pairing: Partner it with crumbed chicken breasts dabbed with mustard-cream sauce, or with baked salmon, smeared with salsa verde (puréed mint, parsley and capers).
