Our 2022 Bourbon Barrel-Aged Chardonnay is golden straw in colour and opens with aromas of ripe, grilled peach, with hints of toasted marshmallow, vanilla bean custard, and baked spiced pear. Rich, creamy, and concentrated flavours of grilled peach, lemon pie crust, graham cracker, vanilla bean, baking spices, and toasty oak lead to a balanced acidity and lingering finish.

The fruit for our 2022 Bourbon Barrel-Aged Chardonnay was sourced from vineyards where warm days and cool nights provided ideal ripening conditions for grapes to develop bright, ripe fruit flavours and crisp acidity. The grapes were harvested at night and in the early morning to preserve ideal acidity and sugar levels. Harvest ran from September through October 2022.

The 2022 vintage had a moderate growing season throughout spring and summer. Cooler temperatures meant harvest started later than normal in the first week of September. Harvest maintained a consistent steady pace, and the near-perfect temperatures and dry conditions allowed the grapes to fully ripen and mature slowly. The resulting wines show balanced flavours and excellent aromatics.

After night and early morning harvesting, we pressed the grapes as whole clusters then cold fermented the juice in stainless steel to fully capture its fresh flavours. It underwent malolactic fermentation to foster a rich, creamy mouthfeel. A select portion of the wine was aged for eight months with American oak bourbon barrels.

Food Pairing: Enjoy with grilled halibut with lemon caper butter, roasted pork tenderloin, garden salad with gorgonzola and toasted pecans, shrimp scampi, bacon-wrapped dates, or sip it on its own as an aperitif.
