Pantelleria Passito is a special and unique type of dessert wine produced on the island of Pantelleria, which is situated in the Mediterranean Sea between Sicily and Tunisia. The grapes are left to dry in special appassitoi using only the heat of the sun. The harvest is manual and after about three/four weeks of drying natural the grapes destined for vinification in their owncellar.

The grapes are harvested by hand, a part is placed at wither for 20 days, and a part started on fermentation. Next the raisin comes added to the fermenting must, and once the sugars have run out, it is left to macerate for a few minutes weeks, so maceration facilitates the release of typical substances of the passito.
