Quite delicious, fresh and fruity on the palate. Dry with a core of fruits from lemon and apple to moments of passionfruit, grapefruit then fresh herbs. When the winemakers approached making this Sauvignon Blanc they wanted to make something that was distinctively Sauvignon Blanc in terms of aroma and flavour but also add in complexity and weight. Winemaker, Jane had never worked with a concrete egg before but had been fascinated with the concept and tried many wines made in an egg. The concept that the wine keeps moving in the egg shaped vessel rather than sink to the bottom of the tank as in a conventional, straight sided tank – this moves the solids (yeast, grape pulp etc) around, thereby imparting lots of flavour and texture.

Just to add to all of this, some skin ferment on a small portion, barrel fermented the juice lees and did the last ferment in stainless steel at 7C, about as cold as you can go before you kill the yeast!

Named after the winemakers young son, who is always restless and to nod to the restless nature of the wine in the egg.
