Description
"Spicy and invigorating with a sweet ripe fruit texture buffered by savoury and smoky elements to give layers of interest. Packed with flavour yet showing a restraint that is endearing and delicious, especially at this price" Cuisine Magazine 2019
Vivid red / purple in colour with an expansive nose of blackberries, blood plums and chocolatey oak. The palate is opulent and inviting with dark plum and blackcurrant fruit flavours matched by dried herbs, cloves and subtle spicy oak. Fine-grained savoury tannins provide definition to the impressively long finish. This powerful but well balanced wine is very approachable now but will gain character and complexity for up to ten years cellaring.
2017 saw a return to vintage conditions not commonly seen for over two decades. A very wet winter followed by a cool summer with few spikes of heat meant that vintage as up to a month later than what has been common recently. A dry and consistently moderate autumn ensured the fruit was able to ripen slowly in ideal conditions.
Sourced from a selection of mature, dry-grown vineyards in Langhorne Creek managed by Jim Zerella. The fruit is partially hand-harvested before de-stemming and cool fermentation in small two tonne open fermenters with regular hand plunging. Matured in seasoned French oak (20% new French) for six months before bottling with minimal filtration and sulphur addition.
Inspired by humankind’s evolution through thousands of years, The Theory of Evolution Wines embody the inevitable journey of wine lovers to enjoying the world’s classic great varieties. Winemaker Corey Ryan has crafted each varietally expressive and well balanced wine from established low yielding vineyards to deliver quality and value that will appeal to all wine drinkers.
