Medium-bodied with ripe berries & dark chocolate

Description

  • Ripe berries
  • Dark chocolate
  • Spicy vanilla
  • Medium-bodied

Light ruby in the glass. Ripe berry character with dark chocolate. Medium-bodied fruity and spicy vanilla. Ready to drink now, but with further cellaring the wine will gain in complexity and character for the next 2-3 years.

Grapes were sourced from a selection of the Cape's top vineyards in Stellenbosch, Paarl, Wellington and Robertson, harvested at optimal ripeness to achieve the fruit-driven character of the eventual wine.

Grapes were harvested by hand in February and March at between 23ºC and 25ºC Balling and each vineyard block was separately vinified. The grapes were fermented at low temperatures (between 20ºC and 25ºC) to retain fruit flavours. In addition, three days' maceration helped to preserve flavour while giving intensity of colour to the wine. The skins were then removed, pressed and malolcatic fermentation completed.

Food Pairing: It can be enjoyed with poultry, veal and red meat dishes.
