"This wine is ready to drink, its window is wide open with aromas and flavours of plums and red cherry, some dried versions of the same as the wine slips into it secondary mode. Dry with textures from the tea-like tannins and acidity framing the core fruit flavours. The palte is bright and fresh up front, with cocoa powder and raspberries giving it a lot of structure. Aromas of toasty oak, coffee and cherries support the palate, making this an exceptional Pinot Noir.
At the winery, the fruit was held in a cold soak for five days, extracting elegant colour and tannin from the skins. Fermented in stainless steel tanks at warm temperatures, at this time the grapes were hand plunged up to eight times daily for further extraction. The wine was racked off gross lees and into oak infused tanks where it underwent a second malolactic fermentation before being blended and bottled.
Food Pairing: A perfect match with hearty beef, this fresh and bright Pinot Noir will leave you wanting more.
