A well balanced Shiraz highlighting aromas of red berries, with white pepper and herbaceous notes featuring a hint of vanilla and sweet spice. This wine displays upfront flavours of strawberries and herbal notes. Well integrated oak is balanced with soft tannins giving good palate length.
The fruit for this wine was sourced from our vineyards in South Eastern Australia. The climate is hot with high evaporation rates and generally low rainfall, making irrigation essential. The climate is also continental, resulting in long sunny days and noticeably cooler nights. Long sunshine hours ensure fruit ripens fully and low relative humidity results in little incidence of disease.
The fruit was crushed to red fermenters where the fruit was fermented on oak at cooler temperatures of 18 22oC for 5 7 days. Fermenting at cooler temperatures allows the fruit flavours to be nurtured and enables retention of varietal characteristics. Post fermentation the majority of the wine is matured in stainless steel tanks on Oak, then blended, stabilised and clarified.
Food Pairing: This Shiraz pairs well with a range of dishes including succulent meat dishes and tomato based pasta.
