Description

Petit Chablis is a perfect introduction to the world of Chablis' fine wines. Its Portlandian subsoil differs somewhat from other AOCs in the region. However, it still evokes Chablis characteristics with lovely freshness on the palate. Bouquet is marked by great freshness, whilst the palate showcases fruity, floral and mineral notes. This is a light and lively wine, best served lightly chilled at 12°C to 14°C.

Chablis is a wine region with global renown. Domain William Fevre’s vineyards sit on Kimmeridgian subsoil and enjoy ideal exposures for the production of a very fine wine.

In the winery wine makers use the principles of gravity so as to avoid all pumping, which could potentially harm the quality of the wine. Grapes recieve a brief  pneumatic pressing to obtain a gentle separation of the solid and liquid parts of the grape. Very light static settling of the juice is employed to preserve enough fine lees so that the alcoholic and malolactic fermentations can occur naturally. The must is run in small stainless steel vats for maturing of 8 to 10 months to preserve freshness.

Food Pairing: Excellent alongside the fresh flavours of a variety of seafood such as oysters. We recommend trying with a French favourite of “Marinières” mussels.
