Description
Cherry, Oak, Spice
This Shiraz is vibrant red with engaging aromas of red berries with hints of spice. Bursting with sweet berries and a touch of aniseed spice, combined with velvety tannins and soft acidity enrich the texture and length on the palate.
Following good rains during winter, good soil moisture along with warm spring days leading into the 2021 vintage allowed the vines to enjoy a good growing season with crops returning to an average size. Relatively mild summer temperatures enabled the fruit to retain a good acidity and freshness of flavour. Harvest began mid-January for the white grapes, with red grapes starting a month later and all Riverina fruit harvested prior to the end of March. Good yields and very good quality.
Harvesting of fruit is timed to achieve a balance of fruit freshness, flavour development and ripe tannins and structure. Fermented on skins for 7 days at 23-27ºC. A combination of American and French oak used at maturation.
A celebration of our Italian roots, planted in Australian soil. Enjoyed internationally, these wines reflect the styles of wine that have been appreciated by the De Bortoli family for four generations.
Food Pairing: Savour with a Rack of lamb, Mushroom Risotto or your favourite burger.
