Description
"ery dark, deep, ruby-red colour, a little lighter on the edge. The bouquet is concentrated with a very deep heart of ripe black cherry and berry fruit entwined with a layering of complexing dark herbs and subtle whole bunch stalk notes. Dark plum fruit emerges and the beginnings of savoury secondary development with a little game and undergrowth. Medium-full bodied, the palate is well-proportioned with rich and deep, finely concentrated flavours of ripe black cherry and berry fruit along with plum notes. The fruit is complexed by dark and dried herbs, stalk elements and savoury secondary detail. The palate features fine-grained flowery tannins which provide linear structure. The wine flows with good acid energy to a long and sustained finish. This is a well-proportioned black-fruited Pinot Noir with fine concentration and structure showing the beginnings od secondary complexity. Match with wild duck and pork or game dishes over the next 5-7 years. Indigenous yeast fermented with 15% whole bunches to 13.5% alc., the wine spending 10-28 days on skins and aged 12 months in 30% new oak" Raymon Chan, Sep 2018
