Grown in our single estate vineyard in the cooler, elevated northeast of McLaren Vale, it offers lively fruit, spice, and a lighter touch on the classic Aussie favourite.
Picked, destemmed and sorted into stainless steel open fermenters. Wild fermentation, gentle maceration on skins for 15 days. Matured on lees in old French oak puncheons and foudre for a total of 11 months. Bottled February 2025.
