Blondie with Bubbles! You’ll be fizzing about this addition to the Wooing Tree family – a bubbly sister to the popular Wooing Tree Blondie. 100% Central Otago Pinot Noir in a new style. Fun flirty and full of sparkle.
The elegant champagne colour resulted from minimal skin contact prior to a gentle whole bunch press. The juice was initially fermented in stainless steel to retain the varietal and fruit characteristics for the primary fermentation. This base wine then went through a secondary fermentation in a pressurised tank before dosage (sugar addition) to retain the right balance of sweetness and acidity.
This wine shows classic Blondie characteristics of pear, white peach, hints of honeysuckle on the nose with stone fruit, pink grapefruit and rock melon on the palate. A dry and balanced palate leads to a soft mousse and long brioche finish. Best served slightly chilled.
