"Crisp, lean, dry and elegant. Subtle floral citrus aromas. Minerality, raw almond, light oaky spice, apricot, quince, lemon and nectarine. Bone dry finish" Phil Parker
Pale lemon. Citrus fruit with white peach and toasty, flinty notes. Layers of white stone fruit, with toasted spice complexity. Creamy texture offset by juicy natural acidity giving a refreshing finish.
This is a little stunner of a Chardonnay. Made with the expertise of Theo Giesen, winemaker extraordinaire at the helm.
Fermented in a combination of tank, in French oak hogsheads and German Oak Fuders. Innoculated with yeast chosen to highlight the natural fruit intensity, and add texture and flinty complexity. Partial malolactic fermentation. 16-18C. Matured in tank on lees and in French hogsheads and German oak Fuders for 8 months before racking and blending.
