A complex Pinot Gris that highlights the Waipara Valley's distinctive aromatics. Aromas of red apple, pear and warming ginger spice are complemented by a structured palate, with juicy acidity and a mouth watering finish.

Sourced from The Mound, Home Block and Deans vineyards of the Waipara Valley.

Harvested primarily in the morning, the fruit was pressed immediately to preserve flavour. The juice was left to settle until very clean, then racked, warmed and inoculated, with a range of yeasts. Regular stirring for a month, until finally blended using natural methods.

Food Pairing: Lightly chilled as an aperitif, or with spicy dishes such as Szechuan chicken.
