Faint golden straw colour in the glass. Attractive varietal nose with subtle hints of ginger. Enticingly perfumed and wonderfully rich; this wine is sure to blossom into something quite extraordinary. Showing exotic varietal fruits such as lychee and satsuma pith. Seamless acid profile with some creamy lees notes that fill out the mid palate.
Sourced from The Mound vineyards in the Waipara Valley with deep, free draining Glasnevin gravels. This premium range Waipara Hills showcases the very best varietals of the South Island regions of New Zealand.
A mild spring meant no frosts during flowering season. This was followed by good fruit set during a hot, dry December. Warm and humid weather that followed meant early veraison, juicy bunches, then perfectly timed Nor'West winds to dry out the canopies before harvesting the well ripened and flavoursome Gewürztraminer.
Fruit was pressed and left on skins for 3 hours, juice was then racked to a selection of bessels, warmed and inoculated with a range of yeasts. Wine was left on lees after fermentation for 3 months to promote texture and character. The wine was blended using traditional methods and fnished for bottling.
Food Pairing: Slightly chilled with spicy dishes to complement the rich palate.
