Grapes are harvested at optimal maturity to retain natural acidity and aromatic intensity. After gentle pressing, the juice undergoes cold settling followed by fermentation at low temperatures to preserve citrus and tropical aromatics. A short period of ageing on fine lees enhances texture, roundness, and balance.

Alcohol is removed using a low-temperature vacuum distillation process. This gentle technique allows the alcohol to evaporate while preserving the wine’s aromatic profile, freshness, and varietal expression, resulting in a high-quality alcohol-free Sauvignon Blanc.
