Ripe nectarine, elderflower, bay leaf, and bright florals with a hint of spicy white pepper. Ripe stone fruits, lime sorbet, crushed dill and a tight riverstone minerality balance with a crisp, elegant long finish.
Stony soils with overlying sandy loam, deep river silt and free draining gravel of the Waimea Plains.
Fruit harvested from three distinct vineyard sites were gently destemmed and pressed with freerun and pressing fractions separated. A selection of Austrian aromatic yeast strains were fermented at cool temperatures to enhance varietal character. Maturation on light lees for 3 months to create texture and mouthfeel before careful blending of the 6 unique components.
