Description
Apple, Dry, Pastry
"A lovely example with a fragrant bouquet of ripe stone fruits and apples then a fine leesy development, a youthful wine too with freshness and an attractive citrus quality. Crisp and dry, a lovely mousse and flavours of leesy framed stone fruits reflecting the bouquet. Well made with a medium finish, best drinking from day of purchase through 2028" Cameron Douglas, Master Sommelier, Dec 2024
Complex and elegant, this exceptional Villa Maria Reserve Méthode Traditionnelle uses traditional methods to showcase delicate apple and stone fruits with subtle notes of brioche leading to a creamy-rich palate and a long crisp finish.
Sourced from selected vineyard sites in Marlborough, this cool climate with high sunshine hours, provides brilliant acidity, structure and fruit characters which are required for producing high-quality sparkling wine with depth and finesse.
Hand picked Chardonnay and Pinot Noir bunches were gently pressed, taking only the most pure free run juice. Once settled, the clear juice was racked and inoculated using yeast strains. Fermentation was controlled at low temperatures in stainless steel tanks to allow the development of fine, pristine flavours. Malolactic fermentation was encouraged to build texture and mouthfeel in the base wine. A portion of back vintage reserve wine was included to add complexity and depth. The tirage was tucked away in temperature controlled storage for 5 years before being disgorged.
Food Pairing: Fresh seafood, mild cheeses or cured meats.
