High sunshine hours and low rainfall make Hawke's Bay New Zealand’s ‘home’ to the French Bordeaux variety Merlot. Sourced from vineyards across the region predominantly those in close proximity to Gimblett Road, the fruit is destemmed & crushed to fermentation vessels, then plunged or pulsed with oxygen to extract colour and flavour prior to maturation.
