This Cabernet Sauvignon showcases a deep ruby colour and perfumed varietal characters of dark plum, dried herbs, vanilla spice and coffee bean. The palate displays polished tannins ensuring a soft yet full-bodied mouthfeel.
The Soler Vineyard is situated on free-draining gravel soils in Hawkes Bay, applying organic farming and up-holding Villa Maria’s sustainable principles.
The 2018 Hawkes Bay vintage followed on from officially one of the warmest summers on record, which gave red varietals in particular superb conditions for ripening. Once crushed to open-top fermenters the grapes were inoculated with Bio-grow approved yeast and fermented at 30 degrees C. Post fermentation the parcels were pressed to oak barriques, 15% new, for 14 months maturation. The wine was blended, free-range egg white fined and filtered to bottle.
Food Pairing: Cabernet Sauvignon is particularly good when paired with robust, fullflavoured dishes, red meat and cheeses. Drink now or hold for up to 5-8 years when the wine will develop further complexity.
