A lovely almond colour in the glass, the nose reveals toasted coconut, fresh pear, and apple strudel aromas. Textured and dry, the wine has roasted almond flavours mingling with fresh thyme, wild fennel, and cinnamon. This multi-layered Pinot Gris is opulent yet clean and juicy with fresh acidity. Great balance and a waxy mouthfeel are complimented by a beautiful lemonade type texture.

The phoenix is an immortal bird associated with Greek mythology. Much like the phoenix, after a three year hiatus, Two Rivers Pinot Gris has arisen from the ashes and is born again.

A balanced growing season led to healthy vines and perfect ripening conditions. A cool February resulted in this years wines having expressive aromatics, great energy, and fresh lively acidity with a tight structure on the palate.

Grapes were hand harvested for purity and machine harvested at night to help capture aromatics.

Lightly pressed, the juice was fermented cool, predominately in stainless steel to maximise fruit purity and distinctive varietal character. The wine was then aged on light yeast lees for four months to gain complexity and increase mouthfeel.
