"Bright, pale blush-pink with some depth, lighter on edge. The nose is intensely aromatic, packed with nuances of raspberries, strawberries melded with rose bush. Medium-bodied, dry to taste, aromas of raspberries and strawberries are ripe and vibrant with mouthwatering acidity, rose fragrance enriched the palate. Creamy mouthfeel and fine-textured phenolics contribute to a silky palate, carry rich rose fragrance to a lengthy, dry finish. This is a dry, Pinot Noir rosé with a vibrant core of raspberries and strawberries with rich rose floral and a silky mouthfeel. Match with veal medallion and charcuteries over the next 2 years. Pinot Noir grapes were hand harvested on the 17th of April 2021 at 22.5 Brix from Three Miners Vineyard, near Alexandra. The fruit was whole bunch pressed and then allowed to settle overnight. The juice was settled for 24 hours and then racked to two tanks and fermentation begun using various inoculated yeasts. The juice was fermented cool to retain flavour and the fermentation stopped once flavour, sugar and acid balance was reached.
In many areas of Central Otago where water was scarce, gold miners used rocker boxes. Miners poured water slowly over sand and silt at the top of the sloping box, gently rocking the box like a cradle to wash and trap alluvial gold.
Food Pairing: Seafood, light salads, light pasta dishes.
