Description

  • Toasty oak
  • Ripe plum
  • Chocolate
  • Spice notes

"Expressing lovely fruit intensity, the wine shows black/blueberry, mixed spice, roasted hazelnut and subtle game characters on the nose. It’s equally attractive on the palate, delivering succulent fruit flavours and plump mouthfeel, well supported by smooth texture and silky tannins. Upfront and delectably friendly. At its best: now to 2025" Sam Kim, Wine Orbit, May 2020

A rich, complex wine with mouth filling flavours of ripe plums, chocolate and spice, with a hint of toasty oak.

Sourced from established vineyards in the Langhorne Creek region in South Australia. The sheltered aspect and consistent temperatures combine to ensure the retention of natural acidity in the elegant fruit harvested.

2019 was a solid vintage in Langhorne Creek especially considering there were several extreme heat days to contend with over the Summer months. Thankfully Langhorne Creek vines hardly suffered due to cool, coastal breezes, and winemakers enjoyed pleasant, even weather heading into vintage. Yields were average across the board and perhaps better than other South Australian regions.

Picked partially by hand. The fruit is hand-harvested and vineyard sorted before de-stemming and a traditional vinification in small two and three tonne open fermenters with regular hand plunging before partial maturation in three hundred litre American oak barrels for six months.

Inspired by humankind’s evolution through thousands of years, The Theory of Evolution Wines embody the inevitable journey of wine lovers to enjoying the world’s classic great varieties. Winemaker Corey Ryan has crafted each varietally expressive and well-balanced wine from established low yielding vineyards to deliver quality and value that will appeal to all wine drinkers.

Food Pairing: A great match with tomato based pasta dishes or a chargrilled steak.
