Garnet red in colour. The nose shows typical scents of Sicilian Syrah – blueberry, blackberry and cherry with hints of tobacco and black pepper. On the palate, it has well-defined notes of berries with a perfect fusion of spices, black pepper, liquorice and cloves.
Caviro wine group was founded in 1966 in Faenza. Today the group comprises some 27 cooperative wineries and 12,000 wine growers with 32,200 ha of vineyard (85% NZ’s total area) across 7 classic wine regions that collectively produce 9% of Italy’s wine production. Syrah 85% Nero d’Avola 15% sourced from organic vineyards on the hills of Petrosino, Sicily up to an altitude of 400m above sea level grown on clay-limestone soils with an average planting density of 4K vines per hectare. The grapes are harvested by hand from the middle of September. Vinification involves destemming and traditional pressing and the grapes are in contact with the skins for 8-14 days. Fermentation takes place in 400 hl tanks at 25 -26°c for 14 days. The wine undergoes malolactic fermentation with selected bacteria, 20% is then stored in barrels for 3-6 months, with the remainder in stainless steel tanks to retain freshness.
Food Pairing: A good match for red meat, such as beef or lamb, as well as cheese.
