Is a wonderful vintage to craft Sweet Caroline wines. An early cold period leading to a mild temperature growing season ensured full and even ripeness was achieved across red and white varieties alike. Yields were down, but flavours were bold and energetic. Parcel selection in the vineyard enabled timely picking of bright, sweet-fruited berries that are perfect for the soft and fruit driven wine style being crafted.
Seeking bright sweet-fruited berries in the vineyard for 100% hand-picking and handsorting before whole bunch pressing to 100% stainless steel for fermentation. The wine is cool fermented and ceased just prior to dryness. The wine spends a short period on lees to build mouthfeel and flavour complexity before being bottled.
Food Pairing: Delicious on its own and perfect for any sunny occasion.
