Dark yet bright; purple-black. Earth and spice; plums and ripe blackberries freshly picked. Nosegays of hard herbs such as rosemary and thyme; wildflowers, dried; and a distant waft of eucalypt. An enticing combination of aromatics and bouquet, suggesting a friendly and approachable red wine. Both dark and bright plum flavours mixed with this wine’s more earthy and herbal edge. Hints of rounded, ripe fruits interplay with more tart and acidic berry notes and textures. There is grip and there is width across the palate, but also a line of subtle fruit acidity balancing the gruffer tannins. Long; giving.
Food Pairing: Have you ever eaten a proper Toulouse Sausage? Have you really actually tasted one? Well this red wine provides you with a kind of passport to find one and cook it.
