The 2017 vintage saw a moderate spring and summer leading up to an autumn with higher than usual rainfall.
The grapes for this Waipara Sauvignon Blanc were partially whole bunch pressed and maceration on skins. Fermentation took place in different vats and partly in oak under influences of various yeasts and temperatures. Racking by gravity to keep maximum freshness of fermentation-CO2.
