Fruit driven, easy drinking Pinot Noir with red berry fruits and toasty oak. Garnet red. Bright red fruits with a hint of spice, raspberry and chocolate. Fresh, fruit driven flavours of black cherry and cocoa with delicious savoury notes. The palate is clean and crisp with powdered tannins and toasted oak on the finish. Drinking well upon release this wine can be enjoyed young and will continue to mature and develop complexity for the next three to five years.
The fruit was sourced from a selection of vineyards in our preferred Pinot Noir growing subregions. Leading up to harvest each vineyard was closely monitored and tasted to determine when the flavours were at their optimum and then harvested in the cool of the morning.
At the winery each batch of grapes was held cold for five days prior to fermentation to enhance colour and flavour extraction. The juice was then inoculated with yeast for the primary alcoholic fermentation and hand plunged multiple times daily during the height of fermentation. When dry each batch was pressed off skins, settled and then racked off gross lees and seasoned with French oak beans. The parcels of wine wine underwent malolactic fermentation before being assessed, blended, lightly filtered and gently prepared for bottling.
Food Pairing: A lovely match for wild game or rich tomato pasta.
